KEY LIME PUDDING
Makes about 1 cup
3 tablespoons maple syrup
3 tablespoons coconut milk (full fat from the can, stirred)
2 tablespoons + 1 teaspoon lime juice (fresh or bottled key lime)
Blend all ingredients in a blender until completely smooth. Transfer to bowls to eat right away or store in an airtight container in the refrigerator for up to a few days.
